    Try pouring leftover wine into ice-cube trays and use the frozen cubes in gravies or sauces.

    I can deal with lots of leftovers and some left-overs are better than the original dish - eg the fried up yesterday's boiled potatoes.

    You just have to stop thinking that you have to follow a particular recipe to the letter. After all how do you think the chefs you see on television got to where they are today - in particular Heston Blumenthal!

    Unfinished open jars of pesto in the fridge are a problem for me. Opened in the early hours of the morning by a hungry teenager - and invariably a new pot just in case the old one is greener than it should be - they sit there and I just don't know what to do with them. Can anybody recommend any other use other than just on pasta - any particulary good food combinations for a quick sandwich?

    Sometimes, just frying some mince and pesto together and then into a sandwich works. or you could use chips, or evion onion or chicken! Experiment is the best way to find your favourite. These might not sound that appealing but they are tasty...

    Thanks. I am good at trying lots of things but I suppose the truth is that pesto doesn't really appeal to me.

    Anyway I should follow my one advice and experiment!

    Perhaps I will start with something that I usually use basil in - but then that is usually only tomato and mozzarella salad!

    This is my absolute favourite recipe for using up pesto - even my husband likes it and he doesnt like pesto.

    Summer in Winter chicken

    1 tbsp oil
    4 chicken breasts
    200g cherry tomatoes
    3 tbsp creme freche
    3 tbsp green pesto
    fresh basil

    heat the oil and fry the chicken until cooked through. Season. Halve the tomatoes and add to the chicken. Stir, reduce the heat and add the pesto and creme freche until it makes a sauce. Scatter with basil leaves and serve with rice, salad or mash and veg.

    You can also make it veggie by using grilled haloumi or by just making the sauce with the tomatoes and spooning it over spinach and ricotta stuffed ravioli.

    It is a real family favourite of ours.
