Sausage and courgette pasta
Try adding 4 cooked sausages, cut into small chunks, to a roasting dish with 1 tin chopped tomatoes, 1 finely chopped garlic clove and a sprinkling of fresh thyme.
Roast in a preheated oven at 180˚C, fan 170˚C, gas 4 for 20 minutes.
Meanwhile, use a vegetable peeler to peel ribbons of courgette and cook in a non-stick frying pan with no oil for a few minutes.
Cook penne, following pack instructions, then add to the roasting dish with the courgette curls. Mix well and serve as a hearty meal for two.
