    please help i would like to make a simple soup that i can freeze nothing to fancey. please help

    Hi Stacie,

    Got my eye on this thread hoping you get a reply as I could do with something similar.

    Also, a nice easy, healthy pasta sauce anyone?

    a simple soup can be anythin u want really most soups u can freeze i made a sweet potato soup but used a little less tock than usual this helps the soup thicken up, i froze 2 tubs of it. just use one ingredient and you will be fine

    Chop a small onion and crush a clove of garlic, soften in a little oil and then add some stock and a bay leaf and a few mixed herbs and simmer. (Most delicious is real stock made from the boiled up remains of a roast chicken.) Grate a carrot into this and add some rice, broken bits of pasta or little cubes of potato for some carbohydrate. (There is a Colombian soup which is made with more than one type of potato - one collapses and thickens the soup and the other stays firm.)

    I make a 'one of everything' soup which varies every time it's made:
    onion, stick celery, small potato, piece swede, carrot, broccoli stalk etc etc, depending on what's around. Then add some lentils/partly boiled beans, tomato puree, some sort of herbs, stock, and just cook until it's done. Then whizz. It's great for finishing up all those bits of veg which you know you won't get round to eating, and adding bit of veg left over. If you like you can also add bits of chicken/ham or even the bone left over from a roast meal (remove before whizzing). Happy eating!
