    does anyone have a basic cheese cake recipe please
    my teenage daughter would like to make one but i have never made one so dont have a recipe to help her with

    Hi I have two cheesecake recipes that I use. The first requires very little skill and is a quick cheesecake recipe I use with pupils at school.
    Ingredients:
    1 or 2 lemons or limes
    250-500g mascarpone cheese
    150ml whipped double cream
    100g caster sugar

    Base:
    1 swiss roll or
    200g crushed biscuits
    100g margarine

    Decoration:
    Fresh or tinned fruits
    Method:
    Melt the margarine in a saucepan. Add the crushed biscuits and press into the bottom of a flan dish.
    In a bowl place the sugar, whipped double cream and the mascarpone cheese.
    Grate the zest off the lemon or lime, squeeze out the juice and mix into the cheese mixture.
    Place the cheese mixture on top of the biscuits. Spread evenly.
    Decorate with fruit. Chill and serve.

    This cheese cake recipe is one that I made up myself. It is a little more complex as it uses gelatine. But is delicious.

    Ingredients
    500g mascapone cheese
    150ml whipped double cream
    1 tbsp vanilla essence
    100g sugar
    2 egg whites
    4 sheets of gelatine ( 4" long)
    150-200g white chocolate

    Base;
    200g crushed chocolate biscuits
    100g margarine/butter

    Decoration;
    fresh strawberries and grated white chocolate.

    Method.
    Prepare the base. melt the margarine and stir in the biscuits off the heat. Press into a 7-8" deep tin (preferably with a spring release side).
    Prepare the filling. Place the 4 sheets of gelatine into some cold water to soak.
    Melt the white chocolate.
    Whisk up the egg whites until stiff.
    Mix the mascapone cheese, sugar, whipped double cream and vanilla essence. Stir in the white chocolate.
    melt the gelatine over a low heat with 3 tbsp water. Do not boil. Stir into the cheesecake mixture.
    Fold in the egg whites. Place into the tin on top of the biscuits and leave to set in the fridge preferable overnight.
    Decorate with grated choclate and strawberries.
