Cooking instructions: Oven
Oven cook from chilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Remove all packaging and preheat oven to 190°C/Fan 170°C/Gas 5. Place flour in a bowl and season lightly with salt and pepper. Take each cut of beef oxtail through the flour. During cooking: Heat 5ml of oil in an oven resistant casserole dish and add the beef oxtail, seal on all sides for 4 minutes. Remove the beef from the pan and rest for 2-3 minutes. Add approximately 300g of diced mixed vegetables including carrot, onion and celery and lightly fry on a high heat for 2 minutes. Return the beef and juices to the pan and stir together for 1 minute on a high setting. Add 900ml of beef stock and 220ml of water. Bring to a simmer for 2-3 minutes on a high heat, cover and place in a preheated oven for 4 hours. After cooking: If cooking rare, check the surface is fully seared/browned. Check food is piping hot.
