Cooking instructions: Oven
To oven cook from chilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Preheat oven. Remove all packaging and leave lamb at room temperature for 20 minutes. Heat 5ml of oil in a frying pan over high heat. Season lamb with a 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Place the lamb racks fat side down into the pan and sear for 4 minutes. Bring both lamb racks together by interlocking alternating bones to create a guard of honour. During cooking: Transfer guard of honour to an ovenproof dish, pour over pan juices and place on middle shelf of the oven. Cook for 5 minutes per 100g plus 5 minutes to serve lamb medium. Cook for 7 minutes per 100g plus 10 minutes to serve well done. After cooking: If cooking rare, check the surface is fully seared/browned. Cover with foil and rest for 10 mins before carving. Place lamb on chopping board and using a nonserrated knife cut between the bones to serve. Check food is piping hot. All cooking appliances vary. This is a guide only. Oven cooked from chilled. 180°C / Fan 160 °C / Gas 4 5 mins per 100g plus 5 mins (To serve medium) 7 mins per 100g plus 10 mins (To serve well done)
