Cooking instructions: Oven
To oven cook from chilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Preheat oven. Remove all packaging and leave lamb at room temperature for 20 minutes. Season lamb with ¼ teaspoon of salt and pepper. Transfer lamb to an ovenproof dish, and place on middle shelf of the oven. To serve lamb medium cook for 6 minutes per 100g plus 15 minutes. To serve well done cook for 8 minutes per 100g plus 25 minutes. After cooking: Remove from oven. Allow to rest for 10 minutes loosely covered with foil before carving. Place lamb on chopping board and using a non-serrated knife cut between the bones to serve. If cooking rare, check the surface is fully seared/browned. This is a guide only. All cooking appliances vary. Oven cooked from chilled 180°C / Fan 160 °C / Gas 4 6 mins per 100g plus 15 mins (medium) 8 mins per 100g plus 25 mins (well done)
