Korean seafood pancakes

These Asian pancakes are definitely worth a try, with chilli, prawns and a delicious dipping sauce.

You will need

  • For the dipping sauce:
  • 2 tablespoons rice vinegar
  • 2 tablespoons Sainsbury's light soy sauce
  • Pinch of crushed chillies by Sainsbury's
  • 1 spring onion, washed and finely chopped
  • 1 garlic clove, crushed
  • 1 teaspoon Sainsbury's toasted sesame oil
  • For the pancakes:
  • 300g Sainsbury's plain flour
  • 2 large British free range Woodland eggs
  • 300ml water
  • 2 tablespoons Sainsbury's vegetable oil
  • ½ bunch spring onions, finely sliced
  • 1 red pepper, deseeded and thinly sliced
  • 1 chilli, halved, deseeded and thinly sliced
  • 200g pack cooked peeled prawns by Sainsbury's

Step by step guide to making Korean seafood pancakes

  1. For the dipping sauce: mix together the rice vinegar, light soy sauce, crushed chillies, 1 finely chopped spring onion, crushed garlic, and sesame oil in a bowl. Set aside.
  2. Make the pancake batter: sieve the flour into a large bowl. In a jug, whisk the eggs with the water, then whisk them into the flour until smooth. Set aside.
  3. Heat ½ tablespoon of the vegetable oil in a non-stick 20cm frying pan. Add the remaining spring onions, pepper and thinly sliced chilli and fry for 3 minutes, or until softened. Remove from the pan and transfer to a bowl.
  4. Add a little more oil to the pan, then tip in a ¼ of the vegetables and a ¼ of the prawns. Spread evenly over the base, then pour over a ¼ of the batter, tilting the pan to spread evenly. Cook over a medium-high heat for 3 minutes.
  5. Hold a plate over the pancake, then flip the pan, tipping the pancake onto the plate. Slip it back into the pan on the other side and cook for 1 minute more until cooked through.
  6. Repeat with the rest of the ingredients to make 4 pancakes. Cut the pancakes into wedges and serve with the dipping sauce.
