You will need

  • 1 tablespoon olive oil
  • 1 onion, peeled and diced
  • 300g carrots, diced
  • 150g courgettes, diced
  • ½ x 750g pack Sainsbury's pork mince
  • ⅓ x 60g pack Sainsbury's red chillies, finely chopped
  • 1 teaspoon dried mixed herbs
  • 2 garlic cloves, peeled and finely chopped
  • 390g carton Sainsbury's chopped tomatoes
  • 1 chicken stock cube, made up to 1.5 litres with hot water
  • ⅓ x 1kg pack basics long grain rice

Step by step guide to making Mediterranean pork rice

  1. Heat the oil in a large frying pan and cook the onions, carrots, courgettes and pork for 5-10 minutes until browned.
  2. Add the chillies, mixed herbs and garlic cloves and cook for 30 seconds before adding in the chopped tomatoes, 1 litre of the stock and the rice.
  3. Bring to a simmer, and cook for 15 minutes stirring occasionally, until the liquid has been absorbed.
  4. Add the remaining stock and cook for a further 10 minutes until the rice is cooked, season and serve.

Make it veggie: Try swapping the pork mince for 2 x 410g drained butterbeans and 250g chopped aubergine. Cook the aubergine with the onions and carrots and then stir through the butterbeans at the end.
