You will need

  • 2.75kg unsmoked gammon joint
  • 1 tablespoon soft brown sugar
  • 2 tablespoons wholegrain mustard by Sainsbury's
  • 6 whole cloves
  • 1 cinnamon stick
  • 500ml cider
  • 3 onions, peeled and cut into wedges
  • 5 Granny Smith apples, cored and cut into wedges
  • 400g carrots, peeled and chopped
  • 3 tablespoons plain flour
  • 500g pouch signature chicken stock

Step by step guide to making Mustard glazed gammon with cider gravy

  1. Preheat the oven to 190°C, fan 170°C, gas mark 5. Score the gammon fat all over with a sharp knife. Mix the sugar and mustard together and rub this generously into the score marks.
  2. Place in a large, deep roasting tin with the cloves and cinnamon stick, then pour the cider into the tin around the gammon. Cover with foil and roast according to pack instructions.
  3. An hour before the end of cooking time, add the onions, apples and carrots to the tin. Re-cover with the foil and cook for 30 minutes, removing the foil for the final 30 minutes.
  4. Remove the gammon, apples and vegetables from the tin, cover with foil and let rest while you make the gravy.
  5. For the gravy, place the tin of pan juices on the hob over a high heat and whisk in the flour, trying to get rid of any lumps.
  6. Add the stock and bring to the boil. Cook for 2 minutes, then remove the cinnamon stick and cloves. Slice the gammon and serve with the vegetables, apples and gravy.
