No-bake chocolate tart

This dense, rich, truffle-like tart will satisfy any sweet tooth, and it couldn't be easier to make.

  • 175g digestive biscuits, finely crushed
  • 150g unsalted butter, melted
  • 100ml double cream
  • 200g bar dark chocolate, finely chopped
  • 40g shelled pistachio nuts, chopped

Step by step guide to making No-bake chocolate tart

  1. In a large bowl, mix the crushed biscuits with 100g of the melted butter. Press into the base and up the sides of a 20cm round, loose bottomed cake tin.
  2. In a pan over a low heat, gently warm the cream with the remaining butter until just below boiling point. Remove from the heat and add the chocolate, stirring until melted.
  3. Allow the mixture to cool for 5 minutes, then pour into the base. Sprinkle over the pistachios and put in the fridge for 1-2 hours until set.

Cook's tip: To make this tart even more indulgent, try serving with a fresh mint cream. To make, stir a handful of chopped fresh mint through some crème fraîche. The tart can be decorated to suit any special occasion, for example, at Easter top with mini Easter eggs or for Christmas try crystallised ginger or holly leaves.
