You will need

  • 2 tablespoons olive oil by Sainsbury's
  • 4 red onions, peeled and finely sliced
  • ½ x 15g pack fresh thyme, plus extra to garnish
  • 3 tablespoons balsamic vinegar by Sainsbury's
  • 200g bunched beetroot by Sainsbury's, trimmed, peeled and grated
  • 3 sheets filo pastry, halved
  • 30g English unsalted butter by Sainsbury's, melted
  • 100g Somerset goats' cheese by Sainsbury's, torn into pieces
  • 120g bag Bistro salad

Step by step guide to making Beetroot, red onion and goats' cheese tart

  1. Preheat the oven to 180°C, fan 160°C, gas 4. Heat the oil in a frying pan over a low heat and gently cook the onions, thyme, vinegar and beetroot for 20 minutes, stirring occasionally.
  2. Meanwhile, lay a sheet of filo across a 20cm round loose-based tart tin and brush with some of the butter. Continue layering with filo, brushing with butter as you go.
  3. Trim the edges so they hang 1cm over the side. Prick the base with a fork and cook (on a baking sheet) in the oven for 10 minutes.
  4. Spoon half of the onion and beetroot mixture into the pastry case and scatter over half of the goats' cheese. Top with the remaining onion mixture and goats' cheese. Bake in the oven for 10 minutes.
  5. Garnish with the extra thyme leaves; cut the tart into wedges and serve with the salad.
