The ultimate salad

Bursting with seasonal British produce, and pistachio-crusted goats' cheese, this salad has it all.

You will need

  • 400g Taste the Difference Jersey Royals (see Cook's tip), large ones halved
  • 160g Sainsbury's Abergavenny goats' cheese
  • 2 teaspoons olive oil by Sainsbury's
  • 25g pistachio nuts, shelled and finely chopped
  • 3 tablespoons flat leaf parsley, washed and chopped (1 for the goats' cheese balls, 2 for the salad)
  • Cayenne pepper, to season
  • 100g fine green beans, trimmed
  • 100g radishes, washed and finely sliced
  • 200g cherry tomatoes, washed and halved
  • 1 red onion, peeled and finely sliced
  • ½ cucumber, washed, halved lengthways, deseeded and finely sliced
  • 120g bag bistro salad by Sainsbury's
  • 4 tablespoons be good to yourself French dressing

Step by step guide to making The ultimate salad

  1. Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for 15 minutes until tender. Drain and set aside.
  2. Make the goats' cheese balls. In a small bowl, mash the goats' cheese with the olive oil. Roll spoonfuls of the mixture into 8 balls. Chill in the fridge for 10 minutes.
  3. On a small plate, mix the pistachios and parsley together, and roll the balls in the mixture. Sprinkle with cayenne pepper.
  4. Meanwhile, put the beans in a pan of boiling water and simmer for 2-3 minutes, drain and refresh in cold water. Set aside.
  5. Put the cooked Jersey Royals and green beans in a large bowl and gently toss with the goats' cheese balls, radishes, tomatoes, onion, cucumber, salad and parsley.
  6. Just before serving, drizzle over the French dressing.

Cook's tip: If Jersey Royals are not in season, try some of our other delicious varieties such as British Gems, or you can use any other small new or salad potatoes.
