One way to preserve foodstuffs is through the pickling process. Most of the time, this will involve storing the food, such as pickles, onions, and beetroot, in vinegar, to slow down the decaying process. This also adds an acidic and sour punch to the food that, while being an acquired taste, can also be completely delicious. Otherwise, the pickling will be achieved by a brine, including storing the foodstuff in its own juices, which can heighten the flavours.
Another way to preserve food is by converting it into a jam or conserve. These are generally sweet and sticky and are delightful either by themselves or on top of something such as a scone. The pickled treats also work well on top of foods such as crackers. Particularly when paired with cheese as the acidity can help cut through the fatty nature of the dairy.
