Make the sandwich

Choose from our range of lovely soft sandwich thins to create the perfect sandwich for a quick and tasty snack

Poached egg and Parma ham

2 Warburtons Sandwich Thins
2 tablespoons mascarpone cheese
1/2 lemon, zest and juice
4 slices prosciutto ham
handful rocket leaves
2 eggs
2 tablespoons olive oil, for frying
black pepper

Toast the Thins lightly on both sides. Meanwhile mix the mascarpone with the lemon zest and 1 teaspoon of the lemon juice. Divide the mixture between the Thins, then arrange two slices of prosciutto on each thin. Toss the rocket in the remaining lemon juice and divide between the Thins. Heat the oil in a nonstick frying pan and fry the eggs to your liking. Place a fried egg on top of the rocket and season with black pepper. Add the lids and serve immediately.
