  • Leftover Roast Ham & Poached Egg

    Ingredients

    2 slices ham, left over from Sunday lunch

    1 egg, poached

    1 tsp Hollandaise sauce

Method

1. Toast the crumpet on both sides.

2. Meanwhile, bring a small saucepan of water to the boil, then turn down the heat.

3. Crack the egg into the pan and poach for a couple of minutes, until cooked the way you like it.

4. Lay the leftover ham on the toasted crumpet, and then carefully place the poached egg on top.

5. Finish off with a twist of black pepper and a dollop of Hollandaise sauce.


  • Mascarpone & Banana Sweet Treat

    Ingredients

    35g mascarpone

    Half a banana, sliced

    1 pinch cinnamon

    ½ tsp icing sugar

Method

Toast the crumpet on both sides.

Meanwhile, mix the mascarpone with the icing sugar in a small bowl.

Spread the mixture thickly over the warm, toasted crumpet.

Pile the sliced banana on top of the mascarpone before sprinkling with cinnamon. Enjoy!
