The colour of this delicate "blush" wine comes from the skins of the pink-tinged Pinot Grigio Grapes. This is a fresh and crisp wine with a zesty aroma and a fruity flavour with notes of ripe pear and peach.

History: With its typically copper-coloured bunches, Pinot Grigio grape variety has reawakened the interest of consumers also because of the high production quality and its much-appreciated freshness. This vine is highly dependent on climate and soil conditions: it has therefore become particularly popular in a number of regions in Northern Italy, Oltrepò Pavese being amongst these, where it found the ideal characteristics for the development of its typical characteristics.
Regional information: Oltrepò Pavese is situated in the province of Pavia, Lombardy, on a broad hilly area between the Apennines and the plain which covers a number of valleys including Valle Versa, Valle Scuropasso and the Casteggio area. The vines are cultivated on the hillsides at an altitude ranging from 200 to 400 m above sea level in a climate which features hot summers and generally cold winters with between 600 and 900 mm of rainfall per year, concentrated mostly in late autumn and early spring.
Vinification: Grapes are destalked, crushed and the must including the skins is cooled to +8°C. Maceration is carried out in total absence of air in order to encourage extraction of the aromas from the skins. It's precisely during this stage of the winemaking process that the copper colour is extracted. When maceration is completed, crushed grape mass is softly pressed and must fermented in stainless steel at a temp.of 18°C. There follows a short period of refinement in stainless steel before bottling.
