This prime Atlantic salmon is nurtured in one of the world’s most beautiful natural settings, off Scotland’s West Coast. Gravadlax literally translates as “buried salmon”, originating from the ancient Nordic practice of burying salted salmon to preserve it. This tradition has authentically inspired our modern method of hand covering salmon sides with Halen Môn PDO Anglesey Sea Salt and demerara sugar, to slowly cure for at least three days before being lightly dressed in aromatic dill, cracked black pepper and crushed juniper berries. It’s then thickly sliced and paired with a traditional mustard & dill sauce, made with Dijon, wholegrain & sweet mustard.
