This is a raw product and must be fully cooked before eating. Ensure good kitchen hygiene and hand washing when handling raw flour and raw flour products.
Victoria Sponge • 150g unsalted butter, softened • 150g caster sugar • 3 medium eggs • 150g Sainsbury’s FreeFrom Self Raising Flour • 3 tbsp milk. Preheat oven to 180°C, 350°F, Gas 4. In a large bowl beat together the butter and sugar until light and fluffy. Gradually beat in the eggs with a little flour to prevent the mixture from curdling. Gently fold in the remaining flour and the milk. Divide the mixture between two greased and lined 18cm/7” cake tins. Bake in the centre of a preheated oven for 20-25 minutes. Once cooked, sponge should appear golden brown and be springy to touch. Turn onto a wire rack to cool. Once cool, sandwich together the two sponges, buttercream and jam for a Victoria Sponge. Check food is piping hot. All cooking appliances vary. This is a guide only. To make this recipe milk or egg-free use your favourite milk alternative and egg replacement powder.
