Abura-age is a thin, deep fried tofu pouch used in a variety of Japanese appetisers as well as sushi, soups and stews. It is often used to make Inari Sushi, a staple for bento boxes by filling with sushi rice and toppings such as prawns. It is also added to miso soup and kitsune udon because of legends that foxes (kitsune) like deep fried tofu.
