Cooking instructions: Oven
Oven cook from chilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Preheat oven. Remove all packaging and allow to rest at room temperature for 30 minutes. Brush the joint with 5ml of oil and season with salt and pepper. During cooking: Sear all sides of the joint in a hot pan for 6 minutes. Place the joint in a roasting dish on the middle shelf of the oven and cook for 20 minutes. Reduce the oven temperature to 180°C/Fan 160°C/Gas 4 and cook for 19 minutes per 500g for medium, and 25 minutes per 500g for well done. After cooking: Remove from oven, cover joint in foil and leave to rest for 20-30 minutes. Check food is piping hot. If cooking rare, do not pierce the meat before cooking and ensure the surface is fully seared/browned. All cooking appliances vary. This is a guide only. Oven cook from chilled 200°C/Fan 180°C/Gas 6 20 minutes plus 180°C/Fan 160°C/Gas 4 19 minutes per 500g
