3 Chillies - Hot
Thai style red chicken curry
1 jar of Sainsbury's Thai inspired red curry spice paste
400ml can of coconut milk
400g diced chicken breast
175g mangetout and baby corn
Fish sauce and soy sauce to season
1. Heat 1 tbsp of oil in a deep-frying pan.
2. Add the paste and fry for 2 minutes.
3. Add the coconut milk, bring to the boil and simmer for 5 minutes.
4. Add the chicken and simmer for 5-7 minutes, stirring occasionally.
5. Add the vegetables and cook for a further 5 minutes until vegetables are al dente and the chicken is cooked through.
6. Season to taste with fish sauce and soy sauce.
7. Serve with rice.
Check food is piping hot. Do not reheat once cooled.
