Cooking instructions: Oven
To oven cook from chilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Preheat oven. Remove all packaging and leave lamb at room temperature for 20 minutes. Preheat 5ml of oil in a frying pan over high heat. Season lamb with a sprinkle of salt and cracked black pepper. During cooking: Seal the lamb in the pan for 2 minutes each side (4 minutes in total). Add a knob of butter while cooking. Transfer lamb to an ovenproof dish, pour over pan juices and place on middle shelf of the oven. Cook for 15 minutes per 500g plus 15 minutes to serve lamb pink. To serve well done cook for 20 minutes per 500g plus 25 minutes. After cooking: Remove from oven. Allow to rest for 10 minutes loosely covered with foil before carving. Place lamb on chopping board and using a non-serrated knife cut between the bones to serve. If cooking rare, check the surface is fully seared/browned. This is a guide only. All cooking appliances vary. Oven cooked from chilled 180°C / Fan 160 °C / Gas 4 15 mins per 500g + 15 mins (To serve pink) 20 mins per 500g + 25 mins (To serve well done)

For best quality, freeze as soon as possible after purchase and always within the use by date. Once frozen consume within 3 months. Defrost thoroughly and use within 24 hours. Do not refreeze once defrosted.
