Serving suggestion: Fill with raspberry jam and buttercream, dust with icing sugar. A simple sponge mix suitable for a variety of baking applications. Follow the recipe instructions to make cake sponges. Use the instructed amount of mix for the size of your cake tins.

INGREDIENTS: Wheat Flour (Wheat Flour, Calcium Carbonate, Folic Acid, Iron, Niacin, Thiamin), Sugar, Palm Oil, Raising Agents: Glucono-delta-lactone, Potassium Carbonates, Sodium Carbonates; Dextrose, Cornflour, Rapeseed Oil.

This is a raw product and must be fully cooked before eating. Ensure good kitchen hygiene and hand washing when handling raw flour and raw flour products.
Suitable for Vegetarians
You will need:
2 x 6" cakes
200g sponge mix
60ml (4 tbsp) cold water
1 medium egg
bake for 15 mins
2 x 7" cakes
400g sponge mix
120ml (8 tbsp) cold water
2 medium eggs
bake for 20 mins
2 x 8" cakes
600g sponge mix
180ml (12 tbsp) cold water
3 medium eggs
bake for 25 mins
Instructions:
1. Preheat oven to 200°C / Fan 180°C / Gas 6.
2. Grease and line two appropriately sized round, sandwich cake tins.
Place the sponge mix into a bowl, add the water and egg(s).
Using an electric mixer, whisk on medium speed to start then increase to high speed for 3 minutes.
3. Divide the mixture evenly between the two lined sandwich tins.
4. Bake in the centre of the oven until well risen (see table above for times). Ensure piping hot and do not reheat.
5. Cool in the tins for 5 minutes before transferring to a wire rack.
6. When completely cool, sandwich together with a filling of your choice.
