Our pigs are born outdoors and after weaning are moved inside to be reared in straw bedded barns.
Cooking instructions: Oven
HOW TO COOK TO PERFECTION. To pan fry & oven cook from chilled. 1) Preheat oven to 200°C / Fan 180°C / Gas 6. Remove all packaging. Pre-heat frying pan to a high heat. Slice joint into 2.5cm thick medallions. Allow medallions to reach room temperature. Season medallions with a pinch of salt & pepper, and place in pan. 2) Pan fry medallions for 3 minutes, turning half way through. 3) Remove from pan and place on a baking tray on the middle shelf of the oven. Cook for a further 10 minutes. 4) Remove from the heat and cover with foil, allow to rest for 2 minutes before serving. Check food is piping hot, juices run clear and no pink colour remains. All cooking appliances vary. This is a guide only.

This product is not suitable for rare cooking. Do not undercook raw meat. Keep raw meat separate from cooked foods. Use separate kitchen utensils and surfaces for raw meat and cooked foods or wash them thoroughly between use. Wash hands after handling raw meat. Raw meat may contain organisms hazardous to health. Cook thoroughly until piping hot throughout, no pink colour remains and the juices run clear. If not fully cooked in accordance with the instructions harmful bacteria may remain.
