Massaman curry
1 jar of Sainsbury's Massaman curry spice paste
450g diced beef
400ml can of coconut milk
300g cooked and halved baby potatoes
salted peanuts (optional)
1. Heat 1 tbsp of oil in a large saucepan.
2. Add the paste and fry for 1-2 minutes.
3. Add the beef and cook for a further 5 minutes.
4. Pour in the coconut milk, stir well and bring to the boil. Then, cover and simmer at low heat for 20 minutes, add the potatoes for the final 5-10 minutes to heat through. Stir occasionally.
5. Stir in peanuts (optional) and serve with rice.
6. Alternatively, beef can be substituted for diced chicken or vegetables.
Check food is piping hot. Do not reheat once cooled.
